Commercial dishwasher leaving dishes greasy
The kitchen's pass-through dishwasher was still running its cycles, but plates and cups were coming out oily, with grease left on them. In a commercial machine, the wash water has to be hot enough to break down fat. If it isn't, the detergent can't do its job and the grease just gets moved around. Our diagnosis showed the heating element had failed, so the water never reached washing temperature. We replaced the element, checked that the wash and rinse temperatures were back where they should be, and the dishes came out clean again.
