🔍 R350 call-out to inspect & diagnoseQuick answer
We repair Tombake bakery and confectionery equipment on site across Gauteng: convection ovens, the prover cabinets they sit on, and the controls, fans, elements and door seals that keep them baking evenly. Typical faults are noisy or failing convection fan motors, elements that have burnt out, thermostats and controllers that read wrong, and provers that won't hold heat or humidity. The call-out and diagnosis is a flat R350, with a fixed repair price before any work starts, and our recent Tombake job in Fourways was fixed within 24 hours of booking.
Tombake equipment we work on
Convection ovens
Electric fan ovens used for bread, pastries and confectionery. Fan motors, elements, thermostats, timers, door hinges and seals.
Prover cabinets
The proving cabinet under the oven: heating element, humidity, temperature controller and door seals, so the dough proves at the right temperature.
Controls and electrics
Digital temperature displays, rotary thermostats, timers, contactors, switches and wiring, including damage after power surges.
Common Tombake faults
| What it's doing | Likely cause |
|---|---|
| Grinding, humming or rattling noise | Convection fan motor bearing wearing or seizing. Fix it early, before the motor stops altogether. |
| Baking unevenly: one side darker | Fan motor slowing down, a damaged fan blade, or one heating element out |
| Not reaching temperature, or very slow | Burnt-out element, contactor, or a faulty thermostat or temperature probe |
| Display shows the wrong temperature, or overshoots | Temperature probe or controller fault |
| Prover not warming, or dough not rising | Prover element, controller or thermostat, or a door seal letting heat out |
| Tripping the power | An element or wiring leaking to earth, or a contactor fault |
| Door not sealing | Worn door seal, hinge or latch: wastes power and gives uneven bakes |
Recent Tombake job
Tombake convection oven making an unusual noise
The restaurant called us because the oven had started making a noise it didn't make before. After a thorough assessment, we traced it to the convection fan motor: its bearing was seizing, and the motor was on its way out. We replaced the fan motor, and the oven was back to running quietly and baking evenly, without the kitchen losing a full day of baking.

Keeping a Tombake running
- Listen to it. A new noise from the fan is the cheapest warning you'll get. A worn bearing is a planned repair, and a seized motor is a stopped kitchen.
- Keep the fan guard and cavity clean. Grease and flour build-up overloads the fan motor and affects airflow.
- Check the door seal. If you can feel heat escaping, it's costing you power and even baking.
- Protect the controls. A surge protector or surge arrester helps after load-shedding.
- Book a yearly service before your busiest season, covering elements, contactors, thermostat calibration and the fan motor.
Other commercial brands
We work on all commercial catering brands, not just Tombake. That includes Anvil, Cook Rite and most other convection, deck and pizza ovens, gas ranges and fryers. See commercial oven repair for the full picture.
